Happy Earth Day!!

Happy Earth Day!! I'm celebrating by doing a little lunchtime Farmers' Market action, picking up my favorite fruits and veggies for the rest of the week's dinners. I've been trying to do a bit more meal planning in advance, grabbing things I have written on a list (I'm usually the listless gal aimlessly wandering grocery store aisles picking out things that just look good at the moment!), and putting together healthy dinners that reap some leftovers for the next day's lunch.

Since getting back from Bali (I still have more pics to share that will get posted this week) I've been making lots of fruit smoothies to recreate some of the delicious juices I had when I was away. Lots of pineapple, avocado (it was SO good), banana, and coconut juice was sipped and I'm trying to keep that juice trend going with my blender. (Do you guys have any favorite blended juices that you make?? Would love to hear!)

I filled my adorable (and ec0-friendly) My Other Bag tote made with vegetable dye (they have an Earth Day sale today too where proceeds from purchases are going to the Rainforest Alliance - I'm hopping over to get my mom one for Mother's Day!) with my haul, not before sampling the merch. Always gots to sample that merch!!

I was most excited about the ripe avocados because I've finally hopped on that avocado toast trend. It's funny because I love guacamole but tend to stay away from avocado slices on sandwiches and salads because of the consistency. (I know, it's so weird!) However this super easy and blended avocado mixture put on top of a whole grain toast is making me a happy gal at breakfast.

I love these two recipes from A Cup of Jo and The Kitchn - but the recipe is basically avocado, salt, pepper, and red pepper flakes with the addition of lime or olive oil depending on preferences. It's truly a new, and healthy, breakfast to add into the rotation. Plus, it's green for Earth Day!! OK, now I'm starving.

Earth Month: Nena & Co.

When I first saw a Nena & Co. bag, I nearly passed out.  The colors and patterns were spectacular and it made me feel like I was on vacation.  Anything that makes me feel like I'm on vacation without having to actually go to the airport and try to make my way through security without TSA patting down my sock bun to make sure I'm not smuggling anything inside it (yep, happens all the time) is quite the golden ticket. If that wasn't enough, the story behind the bags made me like them even more.  The fabrics (made from raw cotton that are then dyed and spun into thread) are all recycled coming from Guatamalan huipils (the traditional tops of Maya women) and portions of each sale go to providing filtered water, jobs, or an education to impoverished Maya families.  What an awesome way to give back.

The collection is a mix of gorgeous beach bags, weekenders, and these adorable mini Huipil clutches made with the fabric and leather by local artisans.

This is such a great "get and give back" piece.  Nothing like a little bit of upcycling to turn a garment that is no longer being used into something so outstanding and chic.  Kudos to Nena & Co - I totally heart you!
